So, I pulled out all the ingredients and got busy. I followed her recipe exactly for the pancakes themselves - except I doubled the recipe since I was making it for 4. For the Cinnamon Filling, I did NOT double the recipe... and I still had some left over. I also used a different Icing recipe since I don't like Cream Cheese. So, there you go. :)

2C powdered sugar
1T butter, melted
1tsp vanilla
2-4 T milkMix first 3 ingredients. Add milk until desired consistency. Serve over warm pancakes.

So, one of these or two small ones are PLENTY! They are yummy, but very sweet. I actually had mine with egg, just to counter the sweetness. I doubled the batch and it made 4 large pancakes and 5 med/small pancakes (yes, I have 3 left for the boys to try). I will definitely make them again... as a special treat or on special occasions.
