Stuffed Mushrooms... an experiment...



Okay, so I don't love mushrooms.... or at least I didn't.  I have heard that your taste buds change every 7 yrs or so (can't remember where I heard that, but I did, promise!!).  So anyhow, I keep seeing these Stuffed Mushrooms everywhere I look on Pinterest.  My husband LOVES mushrooms, so I decided that since I have begun liking them (esp with onions on steak!) that I would try making some stuffed mushrooms.

Here's what I did:


Stuffed Mushrooms:

12 white mushrooms, rinsed and drained  -- I picked up just a carton of mushrooms in my produce department... I           don't know what kind they are (every recipe I have seen calls for White Button Mushrooms).
1/3 lb sausage
1/2 medium onion
1 Tablespoon minced garlic
1/3 C chicken broth
4oz cream cheese, room temperature
1 egg yolk
1/3 C Swiss Cheese (or Parmesan)
1/2 C dried bread crumbs
salt and pepper to taste
olive oil

Preheat oven to 350.

Take stems off of mushrooms and chopped real small, set aside for later.  Cook sausage and drain, set aside to cool.  In same pan, cook onion and garlic for several minutes. Pour in chicken broth, let simmer until liquid is almost gone.  Add mushroom stems and cook until the stems are tender.  When most of the liquid is gone, set this mixture aside to cool.  In a medium/small mixing bowl, place half a block of cream cheese (4oz) and stir in the egg yolk and Swiss Cheese. Then add the sausage and mix well.  Add in the mushroom stem mix, salt and pepper.  Last, throw in the bread crumbs, mixing well.  Set aside.  Take a cookie sheet (I used a pampered chef bar pan) and spray with olive oil.  Place your mushrooms on the sheet tops down.  Now, fill the little hollowed out place with the Stem/ cheese mix... I used my smallest Pampered Chef scoop and filled it with a heaping scoop.  Bake for 20-25 mins at 350 degrees.


I gave my husband the first try and he LOVED them!!  They were delicious... well, except my middle daughter didn't care for them... she took a bite and for some reason thought it was a brownie... she was sadly mistaken!  :)
