Ham & Cheese Muffins:

The first time I ever saw this recipe, it was in a HomeLife Magazine put out by LifeWay.  There were a whole bunch of different muffin recipes, and they were almost ALL delicious!  I seem to have a hard time keeping up with the recipe, so I decided to post it here.  Yes, I just made some this morning...mmmm.




Ham & Cheese Muffins:

2 C Self-Rising Flour
1/2 tsp Baking Soda
1 C Milk
1/2 C Mayonnaise
1/2 C finely chopped, fully cooked ham
1/2 C Cheddar Cheese, shredded

Combine flour and baking soda in a large bowl.  Combine Milk and Mayo in a separate bowl; stir in ham and cheese.  Add this mixture to dry ingredients and stir just until moistened.  Fill greased or paper lined muffin cups until about 2/3 full.

Bake at 425 degrees F for 16-18 mins.

Yields 1 dozen.
