Dessert using Cream Cake and Fresh Strawberries...

I bought some big, beautiful, aromatic, fresh strawberries on Saturday at Keller's Flea Market.  There are always produce venders there... and their wares are most enticing!!

So, I searched Pinterest and found a lovely picture of strawberry and cream cake.  YUM.  So, I went in search of a Cream Cake recipe which I found here:


Cream Cake

Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 1 2/3 cups sifted all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup heavy cream (35% butterfat)
  • 1 teaspoon vanilla

Preparation:

Beat eggs until thick and lemon colored; gradually beat in sugar. Sift together the dry ingredients. Stir in sifted dry ingredients alternately with the cream and vanilla. Beat well.
Spread batter in 2 greased and floured round 8-inch cake pans. Bake at 350° for 25 to 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean.


Unfortunately, I didn't have Heavy Cream... so I went searching for a Heavy Cream Substitute, which I found:

Heavy Cream Substitute:  

Ingredients: 

3/4 cup milk
1/3 cup butter or margarine, melted and cooled

use: 

Use in place of one cup heavy cream


I didn't want to layer my cake, I just wanted a single layer, so I baked the cake in a 9 x 12 glass baking dish.  
I cut the cake into fair sized squares.  


Then I topped with strawberries that I had sliced and sprinkled with a little (1tsp) of sugar.  


Then I added a dollop of Cool Whip.

I was planning on adding a picture of the finished product, but my family devoured their dessert before I could get a picture.  Must've been good. :)
